Brinner Burrito- recipe
The burrito at the restaurant was called a Bayou Sunrise Wrap- here is the description from the menu: "Two eggs, sauteed peppers, sauteed onions, hash brown (sic?) & cheddar cheese wrapped in a flour tortilla." (The words "burrito" and "wrap" are somewhat interchangeable- I think of this product as a burrito. (Potato, potato, burrito, burrito)).
The hash brown was a hash brown patty, not shredded hash browns. The crunch of the hash brown was so good with the soft tortilla, eggs and sauteed veggies. I knew I had all of the ingredients at home except large tortillas so I bought those at Wal-mart when we were getting items for Abby.
I was going to make them on Sunday for dinner (I liked them so much that I was willing to have them two days in a row!) but Jacob arrived home around dinner time and wanted dinner out so we got Chipotle.
I made them for dinner on Monday and we all liked them. I liked them better than the one I had on Saturday at the restaurant.
I had to approximate all of the ingredient amounts since I had no actual recipe. The description from the menu mentioned two eggs per wrap/ burrito but I knew since I was adding meat that I wasn't going to use two eggs per burrito.
This is the recipe that I used based on the menu description and how I knew I wanted to change it.
1/2 pound ground sausage
1 green pepper
1/2 onion
four eggs
1 cup of cheese- I used pepper jack
Here's what I did:
I cooked four frozen hash brown patties in the air fryer. It took 15 minutes on 425 to get them done. While they were cooking, I started dicing the onion and green peppers.
I added sausage to a large pan and put it over medium high heat on the stove. I added the green peppers and onion pieces. By the time the sausage cooked through, the veggies were soft. I pushed the sausage and veggies to the side and added the eggs. I cooked them through and then added the cheese and stirred everything until the cheese melted.
By the time the mixture was done, so were the hash browns and so it was time to assemble:
I placed a hash brown in the center of a large tortilla and then placed what looked like 1/4 of the mixture on top of the hash brown. Then I folded it up burrito style. I did this for the remaining three tortillas, mixture and hash browns.
I took another large pan and placed the burritos in it. I turned the burner on to medium high heat and browned the bottom of the burritos to make them a little crisp. That was it!
Next time I will either add more sausage or more eggs to make even more filling. I will also likely add tomatoes to the veggie mixture (so long as I have ripe tomatoes from the garden). Note that I didn't add any salt or pepper or any spices. I figured the sausage would add plenty of sodium and the pepper jack cheese added a bit of spice so I didn't feel the need to add any spices. Everything is customizeable but I would not change a thing regarding the hash brown! It's a must inclusion ;)
These were the tortillas that I used. I'd never purchased the largest sized ones before.
