Ultimate Double Chocolate Cookie Recipe

About a month ago, my sister told me about some cookies that her friend Janna brought to her. My sister said the cookies were unbelievably good- so much so that she asked her friend for the recipe. My sister told me that I should make them. Very few times has my sister been so adamant about a recipe that she says I "should" make them. She'll tell me she had something that she's sure I'd like but rarely does she tell me she had something that was so good that she asked for the recipe and that I should make what she had. So of course I had to try them. And, yes, they are that, "You need to make these" good.

I was skeptical of them because they contain coffee and I don't care for the taste of coffee. The coffee is only supposed to enhance the chocolate taste in the cookies. The first time I made the cookies, I felt like I could taste the coffee flavor- I've simply used less the other times I've made the cookies. The cookies are rich, intensely chocolate and taste really good.

My sister texted me the recipe which was a  photo of a handwritten recipe (by Janna presumably... it wasn't my sister's handwriting). So here is Janna's from Canada recipe for Ultimate Double Chocolate Cookies

Preheat oven to 350 degrees OR wait to preheat it while the cookie dough chills for 15 minutes

Ingredients:

1 cup butter, melted
1 cup brown sugar
1 cup white sugar
2 tsp instant coffee (I used granules not actual liquid coffee)
1 tsp salt
1 Tbsp vanilla
2 eggs
1 tsp baking soda
1/2 tsp baking powder
2 cups flour
3/4 cup cocoa
3/4 cup chip of choice (milk chocolate, semi- sweet, dark, or white)
3/4 cup chip of choice (a different variety than the first cup of chips- unless there's only kind you like :))

Directions:

Add both sugars, butter, coffee, salt and vanilla. Mix until creamy.
Add eggs. Mix until just blended.
Add flour, cocoa, baking soda, baking powder. Mix together.
Add the chocolate chips and mix.
Chill cookie dough for 15 minutes before baking.
Bake for 9-11 minutes.

Notes:
1. I've made the cookies three times and not used vanilla a single time. The first time I didn't have any vanilla. I then bought some and thought I'd have it for the next time I made the cookies. Once home, I couldn't find the vanilla anywhere despite purchasing the vanilla the day before. So... no vanilla in the cookies for me. I don't know what the cookies taste like with vanilla but I know they taste great without it. There are so many strong flavors that I don't think vanilla is necessary.

2. The directions didn't state to mix the dry ingredients in a separate bowl and then add to the wet ingredients like a lot of cookie recipes say to do... so I didn't. I mixed everything in one bowl. One less bowl to clean :).

3. At least one or more teen was in bed sleeping when I made these each time so I didn't use an electric mixer (due to the mixer's noise). I used a spoon and elbow grease to mix the ingredients. One less apparatus to clean :).

4. Just a preference- the recipes calls for two teaspoons of coffee which, as I stated earlier, was too much for me. I halved the amount one time and that seemed like too little. So the third time, I added one teaspoon and a little bit more (maybe 1/4 teaspoon) and that was just right

The pictures don't really do them justice. Take my word for it... and other's words for it. I brought some of the cookies to my brother John when I visited him last week. He described the cookies as, "sinfully good." He asked me why they tasted so good. I told him I didn't know exactly; it was just a good combination of ingredients. In a world where mysteries dominate our lives right now (eg most things pertaining to Covid), it's nice to have a "mystery" of sorts (why these cookies are so good) in a positive way!!
