Almost good for you almond flour chocolate chip cookies

May 15 was National Chocolate Chip Day (not to be confused with National Chocolate Chip Cookie Day in August).  On May 15th, I made a batch of chocolate chip/ chunk cookies. I made Almost Good for You Almond Flour Chocolate Chip/ Chunk Cookies (that is what I've named the cookie).

When I was in Canada last summer, Katy made these cookies from a recipe that was paleo compliant. Katy unpaleonated these and I do the same when I make them. Even though the recipe is now not paleo, it's considerably more healthy than a traditional chocolate chip/ chunk cookie. That's because most of the sugar is pure maple syrup and instead of regular flour, almond flour is used. Given that the cookies this recipe makes contain a decent bit of protein and very little processed sugar, I decided to dub them "Almost Good for you Almond Flour Chocolate Chunk Cookies." They are also eggless. That makes them very cookie dough eating with no risk of salmonella compliant.

I would be remiss to add that these cookies taste great- that is assuming you like almonds. Not everyone in my family does. Too bad, I mean, I hate it when there's more of something for me to eat. That statement is especially true since one batch makes only NINE cookies. Yes, that's right, nine. And that's with fairly minimal cookie batter consumption before baking the cookies. So this recipe is not for the almond disliking or for someone looking for a recipe that yields a lot of cookies. BUT, if you like almonds, not having an option of over indulging, and feeling like you've eaten something sweet that's almost healthy, then this recipe is a winner.

Here is the recipe:

2 cups almond flour or almond meal
1/4 cup coconut oil or butter
3 Tbls pure maple syrup + 2 Tbls brown sugar
1/4 tsp sea salt
1/2 tsp baking soda
2 tsp vanilla extract
1/2 cup dark chocolate chips or chunks

Directions:

Combine all of the ingredients in a bowl.
Bake in an oven preheated to 375 degrees for 8- 10 minutes.

Here are a few notes:

* I use one cup of almond flour and one cup of almond meal- I like the texture that using part almond meal adds to the cookies
* I always use butter and not coconut oil
* The brown sugar addition was in not a part of the original recipe. I thought the dough needed to taste sweeter after I added just the maple syrup.
*Almond flour/ meal is not cheap... It's about $8/ lb. In contrast, store brand flour (what I usually buy unless King Arthur flour is on sale) is less than $2 for five pounds. I bought my almond flour and almond meal at Trader Joe's because it was cheaper than Kroger.

I added cut up dark chocolate pieces to the top of each of the cookies before I baked them.
